The brief

Burrito.ai / Foundations / 01

The fold is the whole thing.

A burrito fails at the fold, not at the filling. This course covers the mechanics: how much goes in, how the tortilla is prepared, and where the pressure needs to sit so the thing holds from the first bite to the last.

What you'll be able to do

Judge fill volume by eye before you commit to a tortilla

Heat a tortilla to the point where it bends instead of splits

Fold and tuck so the seam sits underneath, closed and out of sight

Take apart a failed burrito and name what actually went wrong

Course contents

01The tortilla

Diameter, thickness, and the twenty seconds of heat that decide whether it folds or cracks.

02Fill discipline

Volume, stacking order, and why wet ingredients never touch the outer wall.

03The first fold

Where the pressure goes, and how to trap the filling before you start rolling.

04The roll

Two hands, one continuous motion, and the tuck that closes the seam for good.

05Failure analysis

Blowouts, cold middles, soggy bases. What each one tells you about the step before it.

Pass conditions

FILL VOLUME .............. 320 to 380 g
SEAM ..................... underside, closed
CROSS SECTION ............ no gaps, no voids
HOLD TIME ................ 4 min, no seepage
BITE 1 = BITE 8 .......... required

Who this is for

Anyone who cooks for other people and has had a burrito come apart in their hands. No prior technique needed. If you already roll clean, start at Module 05 and work backwards.

What to have ready

Around 45 minutes of video, plus one practice roll per module. Bring six tortillas. You will waste two.

Finished a roll you're happy with? Post a photo of the cross section in the Burrito.ai community and the moderators will tell you what went wrong anyway.
